Instructions

  1. Pat the pork chops dry and season both sides with salt, pepper, and thyme.

  2. Heat the oil in a large skillet over medium-high heat. Sear the chops 4 to 5 minutes per side, until golden and the center reaches 145°F. Transfer to a plate and loosely cover with foil to rest.

  3. Reduce the heat to medium. Add 1 tablespoon butter and the apple slices and cook 3 minutes, until lightly browned. Add the shallot and cook 1 minute.

  4. Pour in the apple cider, scraping up the browned bits. Whisk in the Dijon and brown sugar. Simmer 6 to 8 minutes, until the sauce reduces by about half and turns syrupy.

  5. Stir in the remaining 1 tablespoon butter and the vinegar. Return the pork chops and any juices to the pan and spoon the glaze over them.

  6. Serve with the apples and glaze spooned on top.

Tips and substitutions

  • Rest the chops at least 3 minutes after cooking so they stay juicy.
  • Bone-in chops work great; add 2 to 3 minutes per side.
  • Serve with mashed potatoes or roasted Brussels sprouts to soak up the glaze.
