Instructions

  1. Heat the oven to 350°F. Line a rimmed baking sheet with foil or parchment.

  2. Heat the oil in a skillet over medium heat. Cook the onion until soft, about 5 minutes. Add the garlic and cook 30 seconds. Let cool slightly.

  3. In a large bowl, stir the breadcrumbs and milk together and let soak 5 minutes. Whisk in the eggs.

  4. Add the ground beef, cooked onion and garlic, 1/4 cup ketchup, Worcestershire, parsley, thyme, salt, and pepper. Mix gently with your hands just until combined.

  5. Shape into a loaf about 9 inches long and 5 inches wide on the baking sheet.

  6. Stir together the glaze ingredients. Spread half over the meatloaf.

  7. Bake 45 minutes. Spread on the remaining glaze and bake 15 to 20 minutes more, until the center reaches 160°F.

  8. Let rest 10 minutes before slicing.

Tips and substitutions

  • Mixing too much makes meatloaf dense. Stop as soon as everything is evenly combined.
  • Baking it free-form on a sheet pan (instead of a loaf pan) gives more caramelized glaze on the sides.
  • Leftovers make terrific meatloaf sandwiches the next day.
  • Swap 1/2 pound of the beef for ground pork for extra tenderness.
