Instructions
Heat the oven to 325°F. Line an 8x8-inch metal baking pan with parchment paper, leaving overhang on two sides.
Melt the butter in a large microwave-safe bowl in 30-second bursts. Stir in the sugar, cocoa, and salt. Let cool 5 minutes, until warm but not hot.
Stir in the vanilla. Add the eggs one at a time, stirring vigorously after each until the batter looks thick and shiny.
Add the flour and stir until no streaks remain, then beat 40 strokes with a spatula. Fold in the chocolate chips.
Spread the batter in the pan. Bake 22 to 26 minutes, until a toothpick in the center comes out with a few moist crumbs.
Cool completely in the pan on a wire rack, at least 1 hour, before lifting out and cutting into 16 squares.
Tips and substitutions
- Cutting brownies warm makes a mess. For the cleanest squares, chill the cooled brownies 30 minutes first.
- Swap the chips for chopped walnuts or pecans.
- Make them gluten-free with a 1:1 gluten-free baking flour.
