Instructions

  1. Heat the oven to 375°F. Grease an 8x8-inch or 9x9-inch baking dish.

  2. In a large bowl, stir together the oats, 1/2 cup pecans, cinnamon, baking powder, and salt.

  3. In another bowl, whisk the milk, eggs, maple syrup, melted butter, and vanilla.

  4. Spread the diced apples in the baking dish. Scatter the oat mixture over the top, then slowly pour the milk mixture evenly over the oats.

  5. Gently tap the dish so the liquid soaks in. Sprinkle with the remaining 1/4 cup pecans.

  6. Bake 38 to 42 minutes, until the top is golden and the center is set. Cool 10 minutes, then slice and drizzle with extra maple syrup.

Tips and substitutions

  • Make it the night before: assemble, cover, and refrigerate. Add 5 minutes to the baking time.
  • Swap the apples for pears, or 1 1/2 cups fresh or frozen blueberries.
  • Leftovers keep in the fridge up to 4 days and reheat well in the microwave.
